Yup it's me!! I am back sorry for leaving .. It was nothing personal. I didn't really Leave to leave I just left , ment to come back then it just didn't happen till The red guy poked me on FB So I am back!! I have had a few health issues happen to me while I have been away , nothing to awful bad! Well unless you like to make pizza , make Bread! Oh and eat! Lol Yup I am not aloud to eat Gluten again! Ever!! I am Celiac ... Which means Gluten does horrid things to me!! Then after I think I am all fixed up with my new diet , I find I have a problem with High Fructose Corn Syrup! Ughhhh I remember saying one time "I am allergic to everything!" Well it may not be everything but it is a pain in my hinny! So I just eat natural foods not from a box or a bag . Fruit, veggies and meat. Plain whole meat usually. The good thing is!! I lost almost 30 lbs! Whoo hoo huh? Well it's nice seeing everyone!

Glad to see that you are back.
I'm really sad to hear that you have celiac. Between that and a sensitivity to high fructose corn syrup, you really do have to eat a mostly unprocessed diet, don't you? I know that has to be a pain to make that radical a diet change, but congratulations on the weight loss.
Hopefully you are feeling lots better now!

TY for the welcome!! Yes OMG Kay I love Boiled peanuts!! But ya have to go buy them from some old guy by the side of the road that has been doing them for years!! Ya just can't boil peanuts and have them taste the same! Lin , OMG yea OMG!! You have no idea what has Gluten in it!! Some broths , chicken and beef, just about everything in a box or can, not everything!! There are some Broths that have no Gluten , crackers breads , soups , Seasonings, I have so learned to read labels! Then came the corn thing!! Ughhh so ok I thought Corn Chips were safe!! Ughhh Nope!! OMG So now read for Gluten and for Corn. Tonight I had beans and Rice with Veggies, Cumin and some canned maters .. It is Gluten Free and Corn Free!! Who'd of thunk that Corn could give anyone problems? So yea my life has been so turned upside down! As hubbs eats his Gluten Mac and Cheese!! pffttt

I commented in the other thread that with the corn sensitivity you might want to consider going grain-free altogether, at least for a while.
But if you want to keep eating rice, Tinkyada makes very good rice-pasta. It's only made from rice, and has no other grains in it. They have all kinds of shapes and sizes, so you can make gluten-free mac & cheese, spaghetti, etc.
It's very good for use when hot and fresh, under (or in) a sauce. It's only okay for leftovers & cold uses like pasta salads, since it can get a little gummy. You will want to rinse the heck out of it after cooking, as otherwise it will stick together.
A lot of people say you can use the lasagna noodles in no-cook lasagna, just by adding extra sauce and increasing the bake time. That didn't work for me - the noodles were still kind of tough.

Millet and quinoa are also gluten free. They also sneak wheat and corn starch or corn syrup in most all condiments like mustard or ketchup. Even in jarred spaghetti sauces.

Yes they do. Which in many cases means buying expensive allergen-free condiments or learning to make your own. There are support websites out there for folks with corn allergies/sensitivities. Those folks have a lot of experience finding products free of hidden corn.
Seasoning mixes and spice mixes can also have fillers and/or anti-clumping agents made from wheat or corn. It's safer to make your own mixes from single-ingredient herbs and spices.
While spaghetti and pizza sauces can have hidden wheat or corn, you can get plain tomato sauce, tomato paste, and whole, chopped, or diced tomatoes that have no ingredients other than tomatoes, water, or salt. So you don't have to start your spaghetti sauce from fresh tomatoes.

I bought a giant bag of rice like 25 lb bag. So I have to eat that! Lol Or maby give it to my daughter . I do use the Tinkyada rice-pasta, Sometimes, but I am not really into pasta anyway. Never been big on Pasta and Bread. I have never been big on Condiments anyway, to many fillers and sugar if you ask me! We make our own Tomato Sauce for Spaghetti I have only had spaghetti 1 time with GF noodles. It wasn't my fav. But I think I can do it again. Better! I Go to GFS They have spices that are not full of fillers. I love it because their big bottles cost about the same as a small one at the grocery store. Thank you for all the info!! Ohh I love quinoa , HAve not tried Millet as of yet.

Thanks Gulfy!! Wow who'd of thunk bird food? Lol I havn't been to Kroger but I read on line they had some whoo hoo!! Watch me hate the stuff!! Let me tell ya what happened!! My son is in town , They stay at a hotel and they bought me some candy I looked and GF Yay!! I looked and didn't see Corn!! Yay!! Ate a couple pieces then went to eat. Have to splane to waitress I am celiac Bla bla bla. Got a steak and sweet tater and beans Boom in the rest room 3 times!! Ughh thought I was Glutened!! But when we came home I read the box on the candy and sure enuf there is corn in it! I am so glad it was corn and not Gluten!! Wow!! Scared myself!

The most common "gluten free" contains corn because it is the cheapest. Tinyaka makes a decent rice pasta but you might need to get acquainted with health food stores or Whole Foods for some of the rare grains. Have you tried oats? Some celiacs can use certified gluten free oats or oatmeal but it is also usually only at health food stores. Regular oatmeal is often contaminated with wheat.

I cannot eat Oats Even GF Oats bother me... Thanks Gulfcoastguy!! And Thank you Red! I am doing ok actually! I eat Quinoa and Rice , Beans and fresh veggies. And I think I am doing pretty good. It was the Corn thing that threw me for a loop! I still have not told my Dr. About that. Amazing how just a tiny but of corn can upset my whole body!! I think I can get Glutenized before I can get corned! That corn just really bothers me! I will wake up and my face will be swollen. Looks like someone punched me under my eyes! Not black and Blue but swollen. So I have got to read labels! And "Note to self" "Don't Order Beans at a restaurant!" It has corn in it! Pfftt! I have just not heard of this before!! Just doesn't seem very fair. Hard to go out to eat. This weekend some friends are going to have a get together , a cook out. I am afraid to eat anything at cookouts. It will either have Gluten or Corn. So I will probably be nice and say No Thank you.

Be sure to look close and eliminate any that say Rye, spelt,or oats in the ingredients list. Being sensitive to certified gluten free oats makes it full blown classic celiac. I'll try to look up the things that contain corn and don't have it listed on the labels like white vinegar or vitamin c, or modified food starch, or natural flavors.

Well well I think I finally figured out my other problem! This is getting ridiculous! I have been avoiding grains because I thought I might be allergic .. But I have been kinda keeping a journal in my head lol so I havn't been eating grains at all no problems, last night I had a steak and some quinoa , I woke up this morning and bam swollen face! Snoring thru the night and everything! They say not very many people are allergic to quinoa so I think it may be beef .. Sigh!! but the good news is, I don't think it is a grain allergy .. This is what I get my info from Digestive Symptoms: Abdominal pain Indigestion Nausea and vomiting Diarrhea Respiratory Symptoms: Runny nose Stuffiness of the nose Sneezing Watery eyes Coughing Asthma (wheezing) Cutaneous Symptoms: Swelling and itchiness of the skin Lip, tongue and throat swelling Hives Anaphylaxis is a more serious complication that cannot be disregarded. This will begin with the swelling of the face, rapidly progressing and affecting the entire body. Without proper medical attention anaphylaxis will end up into a life-threatening anaphylactic shock.
