I cold crashed a 4 gallon batch of elderberry wine three days ago and hit it with potassium sorbate to stabilize, last night I hit it with SO2 and brought it out to room temperature, one last check on the flavor and if ok it'll get bottled this morning, that'll be the last of the wine for a while, go back to brewing some spring and summer beers later this week.

You should take elderbery to ward off colds and flus, how you preserve it is an individual choice ;D And if your serious, i used to belong to a site that had a section on basic mash for grain alcohol, strictly for educational purposes only cause we all know it's illegal right? an reipies fer corn likker?lol

We havent' tried any home brews, but it sounds interesting. BIL used to make homemade wine, but his wife firmly requested that he quit, can't imagine why. ;D
I do make a cayenne tincture with vodka, which is quite a pick-me-up when you've no energy or aren't feeling up to par. Too hot to really drink, but just a teaspoon will do.

This is yet another avenue yet to explore. I have wanted to try beer brewing, hubs likes IPAs and his favorites tend to be expensive.
I have only ever with help made a fermented concoction from pineapple peelings. It had a beautiful fizzy champagne/pineapple flavor.

If I could learn to brew Belgian Type beers, Hubs would be in Hog Heaven. I make fairly good wine and have made mead. The mead was expensive to do since we don't raise bees. Anyhow, I'm hoping to learn more here. The brewing is for "next year", except for wine which I've already made strawberry, blackberry and scuppernong (a type of grape). i forgot, if you can find a book How to Brew by John Palmer it'll be worth buying as he describes all styles plus he's put in a lot of helpful charts for figuring.
