I finally dug up carrots yesterday with the "help" of our 16 week old puppy. Canned 9 pints and have enough carrots for another 8 or 9. I got tired of scraping and slicing so the rest will have to wait until tomorrow. And there was the added bonus of some stained fingers. lol Worth the effort though, store bought can't hold a candle to the flavor of home canned.

Carrots are all canned. 17 pints total. The gardening season is now officially over. Nothing left to harvest and there's a covering of snow on the garden. The garden now serves as an exercise yard for the puppy (named Ditto) because it's fenced in. She loves being able to run without me worrying about her taking off into the woods.
I'll have to take a more recent photo of Ditto. The last one I took is over a month old and she's grown a lot since then.

Use a peeler, many times faster and easier too. Train
