2 tablespoons unsalted butter, softened 1/4 cup plus 3 tablespoons sugar 1 large egg 1 teaspoon vanilla extract 1 tablespoon freshly grated orange zest(about the amount on 1 navel orange) 1 1/4 cups rolled oats 1 teaspoon baking powder 1/8 teaspoon salt 1/2 cup bittersweet chocolate chips(I used dark chocolate chips because they were on price rollback) heat oven to 350F and line 2 baking sheets with parchment paper(no joke the parchment paper is mandatory) In a bowl beat the butter into the sugar, add egg, vanilla, and orange zest and beat some more. In a second bowl combine oats, baking powder, salt, and stir together then dump in bowl #1 and mix. Stir in chocolate chips. drop tablespoons full onto the paper leaving 2 inches clearance on all sides as these spread. Bake 8 to 10 minutes till the edges turn brown then take out to cool. There was no mistake, there is no flour in this recipe. Some celiacs can use this if the rolled oats are certified gluten free. That means from a health food shop, not Quaker Oats. Normal baking powder has corn starch in it. HAIN Pure Foods baking powder doesn't, it used potato starch.

Does sound good and just in time for the ripening citrus, thanks for sharing! My granddaughter will love helping make these for sure.
