We are having Everybody Hates It soup tonight.
We generally have that after raiding the managers special section in the produce section at the grocery store. When you do that you frequently end up with at least one thing that everybody in the house hates, but when you put it all together in a soup, everybody eats it just fine.
DH is making cat heads to have with it.

We occasionally have soup or 'whatever' made up of leftovers; and sometimes it's surprising how good the dish turns out. Now here's a recipe to whet one's appetite, no??? FRENCH FRY SPAM CASSEROLE 1 pk Frozen french fry potatoes, -thawed (20 oz) 2 c Shredded Cheddar cheese 2 c Sour cream 1 cn Condensed cream of chicken -soup (10 3/4 oz) 1 cn SPAM Luncheon Meat, cubed -(12 oz) 1/2 c Chopped red bell pepper 1/2 c Chopped green onion 1/2 c Finely crushed corn flakes Heat oven to 350'F. In large bowl, combine potatoes, cheese, sour cream, and soup. Stir in SPAM, bell pepper, and green onion. Spoon into 13x9¡å baking dish. Sprinkle with crushed flakes. Bake 30-40 minutes or until thoroughly heated. Enjoy!!!!! ;D

Bier Ox: Makes approximately 9-12 Preheat oven to 350F
Filling (can be made ahead of time or is great use of leftovers):
1 to 1-1/2 lb ground beef 1 8 oz can tomato sauce 1 medium onion, carmelized 1 4 oz pkg mushrooms (sauted if fresh) optional 4-6 cups rice or cooked cabbage Salt Pepper
Brown 1 to 1-1/2 pounds of ground beef, add rice or cabbage, onions, mushrooms, salt and pepper to taste, and pour enough tomato sauce over it to coat all, mix well. Should not be runny, but rather sticking together.
Bread:
Start with your favorite white bread recipe ... mine is the Parker House Dinner Roll/ Bread recipe from grandmother:
7 cup all purpose flour 7 Tbs sugar 7 Tbs shortening 2 C water (warm) 2 pkg yeast (I cut that back to 1 tonight) 2 eggs Dash of salt
Soften yeast in 1 cup warm water and 1 Tbs sugar. In mixing bowl, mix 2 cups flour, balance of sugar, shortening, eggs and salt on medium speed for about 1 minute. Add the 3rd cup of flour and mix again for about 1 minute. Add the 4th cup of flour and mix with a spoon, then the 5th and 6th cup of flour. When the bread dough gets too hard to mix by hand, turn out on well floured surface and knead until dough is firm, adding flour from the 7th cup. Shape cap.
Oil large bowl and place cap in turning to oil all surfaces. Cover and let rise until double.
Gently turn out on lightly floured surface and split in two ... make bread loaf or dinner rolls out of one half if desired.
Gently roll out one half of dough to approx 1/4" thickness and cut with biscuit cutter in even numbers. Roll out rounds to approximately 5" diameter and fill with filling. Top with second round and fold and pinch edges together.
Place on greased baking sheet and bake in 350 oven for 25-30 minutes until golden brown.
Serve with favorite mustard and other german style dishes.

OK, DD found turkeys .45/lb the other day and we have sub-freezing temps, so I roasted a 20# turkey last night and we are doing the turkey grazing today ;D

Made what I'm calling Chinese Slumgullion tonight. We had Chinese takeout last night (Valentine Day) from a nice little Chinese/Vietnamese restaurant here in town. I ordered an extra dish to insure we had leftovers.
First thing I sauteed in butter/olive oil the 4 remaining slices of the chicken breasts that I seasoned for garlic-lime chicken night before last. Then chopped them into small pieces. Then I chopped the remainder of a pork loin that was cooked the previous night (heavy on the smoked paprika) and re-sauteed that. Then dumped in the steamed rice, remains of shrimp lo mein, chicken lo mein and moo shu pork. sauteed that until all was steaming and dumped in 4 eggs beaten well, spiced with soy sauce and salt.
Turned out better than I hoped and cleared the fridge so the small Argonaut squash that I roasted this evening had a place to rest comfortably until I can finish processing tomorrow.

Made garlic butter pasta tonight. Sautee 3/4 of an onion chopped in 3/4 stick butter and add tablespoon to 2 tablespoons chopped garlic to finish. Toss into pasta of choice. Top with a sprinkle of shredded/grated parmesan. As a side, had pureed Argonaut (butternut type) mixed with cinnamon and brown sugar to taste. Melted butter and added garlic powder and brushed over sliced homemade bread and toasted under broiler. Waaaay too much butter to be really healthy, but everybody cleaned their plates - even the picky ones.

Mmmmm, TX, you sure can cook! Sounds delish.
I don't even remember what I ate for supper tonight? Monumental obviously, lol
But last night, I baked two small Sweet Potatoes in the microwave then fluffed them up, added oil, brown sugar and drizzled a tbsp of soy sauce overtop. They were Amazing. I was tempted to cook the other 3 that I had, but knowing that I really wasn't that hungry, I convinced myself to save them for another time

Yum, that sounds good. Was watching Paula Deen yesterday, and she made deep-fried chicken pot pie. I like how that woman cooks!! Going to have to make that soon as I get all the ingredients.
Calories, be damned. ;D

Pizza night again. I swapped out Ragged Jack kale for the usual spinach in the spinach Alfredo pizza. Didn't tell the kiddos and after they ate, asked how this one was. One of the kiddos will only eat spinach Alfredo. The response was: "Good. Gooder!". The other one said it was really good. Of course we have one that won't touch s/A pizza at all, but the usual ham/pepperoni made that one happy. Sooo, since I can grow Ragged Jack, but not spinach - we have a new regular pizza. No more buying the frozen 10oz pkg of frozen spinach pretty much every week. I love it when a plan comes together.

Garret, this weekend I made my first beef wellington with a mushroom gratin. It took a long time to roll the wellington but boy was it worth it. Now I need a source for center beef loin that's less the 20 bucks a pound.

Nothing wrong with that, sometimes LJS is just what a guy needs. I remember eating there more when they still served beer. Beer and fried fish is good stuff. The wife and I were within smelling distance of a LJS a few weeks back while visiting a local Sears. The smell about brought me to my knees.

Made "Pumpkin" soup.
Roasted an Argonaut squash and a round ribbed buff colored one that I figure is probably a Fairytale pumpkin, but not for sure what it was. Pureed them. Put 6 cups in the freezer and used 4 cups for the soup. chop 2 onions and sautee in a couple tablespoons of oil. Add 4 cups winter squash puree, 8 cups chicken broth, 1 cup or so green onions chopped, 1/4 teaspoon nutmeg and 1 teaspoon curry powder. Cook on medium for 15 minutes, add 4 cups milk and cook for another 15 minutes (do not boil). Add in some dinner rolls (from frozen) and a salad of swiss chard, Rouge D'hiver lettuce and green onions from the garden = good eats!

Last night I made ham & cheese sandwiches with a fried egg on top o' the cheese. I also made a cheesy squash casserole with the first pickings of the patty-pan squash (a Paula Deen recipe) and green beans. Even the littles tucked in.

Ok, you can't wipe this smile off my face tonight!
This is the first night in a while that every scrap of dinner except seasonings came from the garden!
Thick slices of patty-pan squash sauteed in butter until tender-crisp seasoned with sea salt and black pepper.
Bok/Pak Choy volunteers chopped and sauteed in remaining butter remaining in skillet with a little olive oil added, seasoned with garlic powder and soy sauce.
Broiled onions drizzled with olive oil and sprinkled with bacon salt (yes you read correctly - bacon salt. Sister in law introduced us to that when we were in San Antonio in March. Darn good stuff)
A sliced up Brad's Black Heart mater and numerous Sungolds. And for wife and I the first Big Jim pepper (tastes like a bell pepper but we both thought we detected a hint of heat).
I am stuffed to the gills, but don't feel bad! Wife and I just couldn't decide what tasted best. Kiddos all gave dinner a thumbs up.
