It is SWEDISH TADITION TO EAT THE YEAR"S FIRST POTATOES AT MIDsummer, which has bfcome synonymous with Saint JOHN> POTATOES ARE EATEN EITHER ON JOhn the BAPTIST"S FEAST @$ JUNE OR ON SAINT JOHN"S eve 23 JUNE> I accordingly ate the first potatoes on 23 June dug the day before, but they didn't have the characteistic taste and texture of new potatoes, probably because they were peeled thickly with a potato peeler, not thinly using an ordinary knife. proper new potatoes are best served boiled with butter and dill, and can be without meat.

Ah... That brings back memories. Dillpotatis served along with gravlax rye bread and a rather bitter green salad at gramma's house. To much dill in one meal for my childish tastes, but it never stopped me from cleaning my plate. I remember her cookies best. You always knew that when you visited there would be a pot of coffee, a pitcher of milk, and a plate of exactly seven kinds of cookies put on the table within 10 minutes of you coming through the door. In fact it was when bakery cookies started appearing on the table that I knew that Morpharmor was unwell. I now have all the recipes and can make the cookies myself. I also make dillpotatis. Though I tend to throw a bit of fresh mint into the boil a little before I add the dill. It makes the flavor smoother. I still serve them up with a generous slathering of parsley butter though. Sometimes if we get the very thin skinned new potatoes I just score them all around instead of peeling them, or occasionally scald them hard and rub the peels off. Usually I just get out the paring knife and peel away though.

We boil new potatoes with:crayfish, sweet corn, sausage, lemon, red pepper, onion for parties.
