To make cider, you just press apples and don't filter. To make Apple wine (apfelwein) 8.5-10% follow this link: www.homebrewtalk.com/f25/man-i-love-apfelwein-14860/To make hard apple cider 4-6% don't add the sugar to the recipe in the link. I'm making a batch of apfelwein tonight.

I'm drinking the Apfelwein I made. I let it ferment for 5.5 weeks and them carbonate in the bottle for another 3. If you drink 3 of them it will kick your ass.
