Caramelized Pumpkin Soup with Smoked Turkey
A 3 pound pumpkin or winter squash 1 tsp plus 3 T of olive oil 2 large yellow onions very thinly sliced 2 carrots cut into strips 1 T sugar 1/2 tsp ground sage 4 cups turkey or chicken stock salt and white pepper to taste 1/4 lb of smoked turkey cut into strips(garnish) 1/2 cup grated Gruyere cheese(garnish) cut open and clean squash or pumpkin and brush with olive oil. Bake at 375F cut side up for 1 hour. Scrap out and save pulp. Warm oil in large pot over medium heat add onions and carrots and cook 15 minutes. Add sugar and cook another 15 minutes to caramelize. Add all remaining ingredients except the garnishes and bring to a boil. Puree, rewarm and pour into individual bowls. Add smoked turkey and gruyere garnishes.
