I've never grown that; how does it hold up in the heat, and does it need blanching???
Sounds nutritious...I'd likely take some, but first to see if I've something good to trade.

There's a thread on gardenweb on bok choi, and looks like you're right about bolting. Seems it's best planted in Fall but even then, it will bolt from stress.
I would compost the whole darn patch, and grow something else. ;D

I've successfully grown Baby Bak Choi in a semi shaded raised bed in the heat of the summer. Having said that, summer heat here is usually in the 90's; seldom over 100F. But shade might be a key component to raising it in southern climes? Put it under a canopy of some sort. Don't close it all in those like a rowcover or that'll boost the heat even more.
Something to consider and try....

Okay, I stumbled across an old post at iDig when I was looking for a post about kale that I had obtained in a trade. This should help those of you in hot southern areas to find varieties of greens that will survive in the heat. BTW, notice that Kale will do so in shade.... idigmygarden.com/forums/showthread.php?t=603&highlight=kale
