While my walk-in pantry contains hundreds of canned soups and cases of dehydrated soups, I prefer making my own soups. Today, with winds gusting over 40 MPH, I figured would be a good day to do just that. I decided to make Chinese Five-Spice/Roasted Red Pepper soup.
Ingredients: 1 jar (12 oz.) roasted Red Peppers-sliced thinly 1 tsp. olive oil 2 large shallots-minced 1 tsp. Chinese Five-Spice powder 1 tsp garlic powder 2 tsp. tomato/chicken soup base powder in 2 cups boiling water 1 jar marinated mushroom buttons fresh ground black pepper
Directions: heat oil in 3 qt pot and add shallots,garlic powder and five-spice powder. Saute 5 minutes. Add 3/4 of peppers, reserving 1/4. Add tomato/chicken base mixture and stir well. Bring to a boil; cover, reduce heat, and simmer 10 minutes. Let mixture cool slightly. using immersion blender, puree the mixture till smooth. add remaining red pepper slices and mushrooms and reheat about 5 more minutes. add fresh ground black pepper to taste. Serve. Optional: add 1 tbsp of sour cream or plain greek yogurt if desired.
This is a quick and easy soup to make and the Chinese Five-spice powder creates an unusal taste at first, which I found myself adapting to quite readily. Will be another regular on the menu. Enjoy!

course, just 2 b a redneck ,i'd fry up a grilled cheese on the side.
