Speaking only about-for myself:
I'd wait for some to fall off the tree, its easier than picking yourself up after you fall out.
Plant them into something direct after picking. Mother nature will supply the (needed) seasons, you can supply supplemental watering.
Oaks, red oaks in particular are very tap-root dominant. If you can, plant them were they are going to live for the next few hundred years...

As soon as they'll come off the tree easy, pick a few. Its OK to put a plank on top of tha pot to make the squirrels hunt elsewhere.
The acorns will not sprout till next spring. They (acorns) do not benefit from drying. Pick 'em and plant 'em.

Those look like what we have in front yard and they do grow very easy. My house plants spend the summer under that tree and they come up in the pots every year . I have seen them on top of the soil in the pots with their root coming out then goes down into the soil , others will be just barely covered with soil and growing .

If the goal is to get an oak tree planted, why not let the squirrels do the work for you? My squirrels bury acorns from the neighbor's oak tree everywhere in my yard. They especially like the flower and vegetable beds. There they find the nice soft dirt - easy to dig in! Sometimes they will bury them in large pots, too. They apparently forget where they buried most of the acorns, so I am forever yanking out oak seedlings. If I ever want more oak trees, every spring I have a large selection of healthy seedlings I could dig up and move to wherever I want them. Heck, some of them are already planted in pots, for the ultimate in transplanting convenience. But, maybe my squirrels are dumber than yours.

My neighbor has a red oak planted along the property line. Its got a nice upright trunk and tidy little leaves (this last is a hot issue if you grow bonsai).
Like many oaks it does not set acorns every year. This year it is in nuts. If I get some before the squirells do, I'll plant a few even though red oaks are slower than mollasses in Feburary.
It might be that somebody somewhere will want some oak babies.

Here on the right coast we don't have any evergreen oaks. My neighbors has what looks ever so much like bear oak leaves on a full sized tree.
The acorns on my tree are way too big to be quercus ilicifolia, even if the leaf look right. This is the third fall I've been here, and the first its set nuts.
